Two hours east of Seattle, in the town of Zillah, brothers Patrick & Matt Rawn of Two Mountain winery explain the process of wine making. Patrick shows us around the hand-harvested vineyards and explains the process of sampling grapes and how to determine if they’re ready. By taking two random bunches from each acre, he can get a sense of how the wine will turn out that year. The four things he looks for are the brix, or the measure of sugar, the PH, the TA, or total acid, and, perhaps most importantly, the taste. Once the grapes are up to par, the technical process of creating the wine begins. After adequate aging time, the wine is bottled and ready to be enjoyed.
